Suggested Heating Instructions
NOTE: Each oven will vary. Also, if you are cooking several dishes in your oven, cooking time may increase.
Pulled Pork and Pulled Chicken:
- Take pan(s) out of refrigeration a half hour before heating.
- Preheat oven to 350°F.
- Leave covered and heat for 1 hour. Check to see if fully heated. If not, put in for another 15 minutes.
- Stir from the bottom up over the top to keep moist (folding). Stirring too much will break down the meat.
Brisket, Ham and Pork Tenderloin:
- Take pan(s) out of refrigeration a half hour before heating.
- Preheat oven to 350°F.
- Leave covered and heat for 45 minutes. Check to see if fully heated. If not, put in for another 15 minutes.
- With a tong, carefully move the meat slices so they are moistened by the pan juices.
- Check occasionally to see if they remain moist during serving.
For our Smoked Thanksgiving Turkeys:
- Bring turkey out of refrigeration 20 minutes before heating. Leave in double pans and oven bag.
- Preheat oven to 325°F.
- Heat for 1 hour and 15 minutes or until an internal temperature of 140 degrees is reach in thigh. Open bag to temp.
- Let rest in bag for 20 minutes, then carve. Drippings can be used for gravy.
- The thighs, legs and wings can appear pink to reddish in color. THis is OK and due to the smoke. Don’t be alarmed, we have smoked your turkey to the appropriate temperature. ENJOY!
Ribs:
- Remove from Cryovac® bag.
- Preheat oven to 275°F.
- Place on foil, meat side down. Add 2 ounces of apple juice and wrap tightly. Place on cookie sheet or in a pan.
- Heat for approximately 40 minutes. Open foil to temp between bones. 185° to 195° is done. This is subject to how you like your ribs.
Bulk Meat:
- Preheat oven to 250°F
- Cryovac® bags are heat resistant up to this point, do not exceed 250 degrees or bag may melt
- Wrap Cryovac® bag full of meat in foil so it is completely covered
- Put in oven for the following times…
1 lb package: 1 hr
2 lb package: 2 hrs
3 lb package: 2.5 hrs
4 lb package: 3 hrs
5 lb package: 3.5 hrs - When fully heated (oven temps may vary), unwrap foil, cut open bags and emtpy into serving dish. If emptying into roaster, reduce temp to 150 degrees for proper holding.
Side Dishes:
- Take pan out of refrigeration half an hour before heating.
- Preheat oven to 350°F.
- Mac-n-Cheese: Remove cover and heat for 1 hour – 1 hour 15 minutes
- Cheesy Potato Casserole: Remove cover and heat for 1 hour 15 minutes – 1 hour 30 minutes
- Loaded Smashed Red Potatoes: Leave covered for half an hour then uncover for 45 minutes. May need to stir to get even heating throughout.
